FLUFFY APRICOTS

 

Put one pound of whole dried apricots in a one quart bowl. You can use either a glass or plastic bowl with a cover. Cover with orange juice. Put the cover on the bowl. I use the calcium fortified orange juice. When using orange juice, why not get the benefit of calcium from the calcium fortified orange juice? Let the apricots set on the counter top overnight, then refrigerate for gourmet treat!. Keep refrigerated until dish is empty. Guess what! You will like them enough to do this recipe over and over again.

 

This recipe is a good source of beta-carotene (vitamin A), potassium, iron, magnesium, calcium, vitamin C, vitamin P, vitamin K, and the B vitamins.
