3/4 cup defatted soy flour
1 teaspoon baking powder
1 cup non-fat cottage cheese
2 eggs
2 tablespoons canola or olive oil
1 tablespoon honey (I use tupelo)
Mix the above ingredients in a blender and whirl until smooth. Also can be mixed by hand in a large bowl with a wooden spoon.Spray skillet with no-stick cooking spray. Put 2 tablespoons of mixture on skillet and cook until golden brown on both sides.
This recipe contains: potassium, magnesium, calcium, lecithin, zinc, copper, the B vitamins, especially B1.
