3 pounds of boneless skinless tenders or chicken breast, (99% fat free) cut in 1" or so serving pieces
paprika, salt pepper to taste
1 medium red onion sliced
1 1/2 cups celery chopped
1 1/2 cups carrots chopped
2 tablespoons honey (I use tupelo honey.)
1 can of Calcium fortified frozen orange juice concentrate (6 oz., thaw but do not dilute)
Garnish with avocado slices Sprinkle chicken breasts with paprika. In the bottom of a slow cooker (crockpot) place onions celery, and carrots in layers. Then place chicken breasts on top. Over top of the chicken breasts put the orange juice concentrate that has been mixed with the tupelo honey. Cover pot and turn the slow-cooker to high and cook about 2 1/2 hours. Then turn slow-cooker to medium and cook until chicken is tender about 2 to 3 hours more, or until chicken is tender.This recipe contains: potassium, magnesium, beta-carotene, alpha-carotene, vitamin C, zinc, iron, copper, selenium, calcium, and especially the B vitamins.
