SWEET POTATO PIE

 

1 cup chopped celery

1 cup chopped onions

2 tsp. low sodium soy sauce

3 tbsp. olive oil

1 lb. ground turkey (no skin) 98% FAT FREE

3 cups of cooked and mashed sweet potatoes

¾ cup of shredded fat free (or part-skim) mozzarella cheese

1½ tbsp. Parmesan cheese

In a large fry pan put celery, onions, soy sauce, olive oil and ground turkey. Simmer about 15 minutes or until ground turkey is lightly browned. Add shredded mozzarella cheese and sweet potatoes. Mix well. Put into a lightly greased two quart casserole. Sprinkle Parmesan cheese over top of casserole. Bake at 350 degrees for about 30 to 40 minutes.

This recipe provides beta carotene, magnesium, potassium, calcium, zinc, iron, copper, manganese, Vitamins A, D, E, as well as the B vitamins.
