APPLE FRITTERS

3/4 cup whole wheat pastry flour

3/4 cup defatted soy flour

1/2 cup non-fat dry milk

1 egg

3 apples (large) cut into bite-size chunks

2 tablespoons honey (I use tupelo honey.)

1 1/4 cups non-fat yogurt

Put dry ingredients in a large bowl and mix until blended. Add egg, honey and yogurt. Blend well. Fold in the apple chunks.

Spray skillet with non-stick cooking spray. Put about 1 tablespoon of mixture onto hot skillet. Sprinkle cinnamon on top of each fritter. Cook until golden brown, turn fritter and sprinkle again with cinnamon. Cook until golden brown. Fritters are good both hot and cold.

Note: I also use a fry pan with a cover and cook fritters as noted above. If you would like a larger fritter, you could drop a 2 tablespoon amount onto the griddle instead of 1 tablespoon.

 

This recipe contains: calcium, magnesium, potassium, copper, manganese, boron, zinc, chromium, lecithin and the B vitamins, especially B1.
