Before you start the recipe,
put skimmed evaporated milk in the freezer until crystals form. Put gelatin and pineapple
juice in pan. Let set a few minutes to soften. Heat to dissolve. Do not boil mixture.
In mixing bowl put the milk taken from the freezer. Using
electric mixer beat at high speed until stiff peaks form. Add dry milk, mashed bananas,
and cottage cheese and beat at medium speed until well blended. Fold in the crushed
pineapple. Blend well into the mixture.
Put mixture into a 7 x 10 inch glass dish. Sprinkle walnuts over
the top of mixture. Refrigerate until firm.
This recipe provides calcium, magnesium, potassium, manganese,
beta carotene, iron, zinc, boron, copper, chromium, Vitamins A, D, C, E, as well as the B
vitamins.
