Each day scientific knowledge grows about the way the foods we eat influence our lives, our health, our activity, and our energy. In the last several years scientists from all over the globe have made substantial strides in proving or disproving the beneficial results of eating different foods. In this book I have tried to assemble summaries of what I consider to be some of the more significant recent research findings and to summarize them in terms that are easy to understand.

To assist you in this, I have included recipes that I have developed in the second part of the book. The recipes include the vitamins, minerals, and foods mentioned in the research. Each recipe lists the vitamins and minerals that are contained in the recipes so you can select them as needed.
You can also apply the research to your own favorite recipes by noting the principles covered and adjusting your recipes accordingly. Practice the substitutions and enjoy the results.
In changing the foods you eat, remember to take it a step at a time, insuring that the food you prepare is tasty and enjoyable to all who eat it. I hope that the research and recipes in this book will help you to have wonderful tasting food that adds to the quality and energy that you and your loved ones experience in life.
