Put gelatin in saucepan. Add
pineapple juice and mix well. Let set about 2 minutes to soften. Heat to dissolve. Stir so
mixture does not burn. In blender or food processor put yogurt and peeled and sliced
bananas. Blend until smooth, about 15 to 20 seconds. Add gelatin mixture, then add
pineapple.
Put mixture into an 8 x 12 inch pan. Put walnuts over the top of
mixture. Walnuts may also be added to mixture instead of putting on top. Refrigerate until
firm. (Mixture may also be put into a cooked 9 inch pie crust.)
The above recipe provides calcium, magnesium, potassium, boron,
manganese, Vitamins A, C, D, K and B. Walnuts contain Omega 6 that converts in the body to
Omega 3 and is thought to benefit the heart.
